Ingredients

  • 2 sheets puff pastry (about 20 x 20 cm each)

  • 4 apples, cut into cubes

  • Juice of 1 lemon

  • 1–1½ tablespoons ground cinnamon

  • 3–4 tablespoons sugar (white or brown)

  • 2 sheets puff pastry (about 20 x 20 cm each)

  • 4 apples, cut into cubes

  • Juice of 1 lemon

  • 1–1½ tablespoons ground cinnamon

  • 3–4 tablespoons sugar (white or brown)

Method

  1. In a large bowl, combine the cubed apples with the lemon juice, cinnamon and sugar. Mix well until the apples are fully coated and start releasing a little juice.

  2. Divide the filling into two equal portions. Place each half in the centre of a puff pastry sheet.

  3. Close each sheet parcel-style, folding the edges in towards the centre and sealing well. Don't worry about being too neat — the rustic look is part of the charm.

  4. With a knife, make a few small slits on the surface to allow steam to escape during baking.

  5. Brush the surface with the juice released by the apples for extra flavour and colour.

  6. Bake at 180°C for about 38–40 minutes, or until the pastry is golden and crisp. Let cool slightly before serving. They're perfect as they are, or with an extra dusting of sugar or cinnamon on top.
